Char Siu (Chinese BBQ pork)

This is a blog post on how to make Char siu (Chinese BBQ pork) at home. it is a honey/ sugar glazed pork marinate that is seen nowadays in Chinese Restaurants. Once cooked serve with sliced chilli or sweet sauce accompanied with boiled rice. Also with some leafy greens like pak choi. Leftovers can be frozen and it freezes well.

Otherwise, it’s accompanied with wonton noodles or just with egg noodles and some blanched leafy greens. In my previous post, I have made roast pork belly. It is different from that due to its marinate and the type in the cut of pork used. A more meaty cut of pork can be used like pork shoulder. If using pork belly there will be less meat content as the fat content will seep out after roasting. This marinade is also great on pork spare ribs.

The secret of making a successful char siu is using fermented soybean. It comes in cubes in a jar. The alternative using ready mixed char siu sauce which can be online or supermarket. Here is a link to buy ready-made char siu sauce.

The recipe below is for approximately 4 people as a a side dish.

Char siu (Chinese BBQ Pork) recipe

INGREDIENTS  

  • 500 grams of pork belly or pork shoulder
  • 1 tbsp sesame oil
  • One tsp grated ginger
  • 1 tsp grated garlic
  • 2-3 cubes fermented soybean
  • 1 tbsp brown sugar

INSTRUCTIONS 

Marinate the pork

  • Marinate the pork, prepare the ingredients beforehand like peeling and grating the ginger and garlic. Cut the pork in 3 cm cubes. Mix all the ingredients together except the brown sugar. Marinate for 2 hours.

Roasting the pork

  • Heat up the oven to 180-degree Celcius. Spread the pork out in a roasting pan. Roast for about 40 – 50 minutes. The cooking time very much depends on the oven and size of the meat. The meat’s cook once the juices run clear. Add the brown sugar 5 minutes it finishes cooking. So do set the timer back 5 minutes.
