German butter cookies how to make them

Here is a blog post on how to make German butter cookies. This cookie has been making a wave on social media recently. As it not only tastes good but also great to look at. I got inspiration from it as well as I was looking to bake something different. Especially during the Chinese New period where I tend to bake a lot.

Of course this recipe is also for all occasions even for everyday eating. It’s great for kids as they love just anything ornamental and cute to look at. The down of this cookie is that it does contain a fair amount of butter which makes it tastes good but high in calories.

I have added pineapple jam to add more texture and flavor to the cookie. Here is how to make the pineapple jam from a pineapple tart recipe of mine.

Recipe will make about 40 cookies depending on big it is. I have still yet to perfect the art of making it a cute cookie but it is so ever delicious. This is due to the ratio of potato flour that makes it ever so light tasting. I use black food colouring it will become grey once it comes in contact with the dough.

125 grams of butter

90 grams of potato flour

140 grams plain flour

1 medium-size egg yolk

1 tablespoon cold milk

60 grams icing sugar

A few tablespoon of pineapple jam

Instructions

Mix the dough

  • Add the butter and sugar using the flake shortcrust pastry method. Add the both flours slowly. then add the egg yolk and then the cold milk. knead till it is well mixed.Then seperate them to make the body of the mouse using the black colouring. For the ears add the red colour.Try to maintain the chillness all the time. This can be done by putting them in the fridge to chill.

  • This is where it takes the most time. Shapping them into desired shapes. just take your time and use pastry and icing tools that can be bpought online or kitchen shops. Add black sesame seeds to shape the eyes. I didn’t use them but got only white ones if there some do use them.

Baking

  • once done bake them in a preheated oven for 10-15 minutes at 180 degress Celsius. Don’t bake too long otherwise, the cookies will be cracked. Do expect some changes in shape after baking.

How to make this light butter cookie

  • 125 grams butter softened
  • 60 grams icing sugar

  • 1 tbsp cold milk
  • black and red colouring
  • some black sesame seeds
