Making sausage rolls

Here is a blog post on making sausage rolls at home. They taste so much better than shop bought ones. Of you can good organic ready-made ones nowadays but they cost just so much. They are a great hit at parties for the young or old.

There are very easy to make as well. All you need is some decent quality sausages (preferably fresh stuffed sausage and done ready made puff pastry. Don’t use frankfurter sausages as most of them are manufactured not freshly stuffed.

Freshly stuffed sausages are widely available here on the UK from butchers counter to supermarkets. They are available in organic or sustainable source. Of course there is also cheaper version ones as well for those tight on budget. Not unless you make your own sausages from scratch one will never find out what exactly goes in these sausages. Growing I have watch my mum making her own Chinese sausages (lap cheong) from scratch. It’s a rarity nowadays to see people making these type of sausages from scratch.

So is ready made puff pastry or short crust pastry. I believe there is also gluten free pastry available as well nowadays.

Recipe

2 packets of freshly stuffed sausages any type of flavour will do. Or use ready prepared sausage meat. I used these ones from Waitrose 

1 packet of frozen puff pastry. (I much prefer using puff pastry than short crust pastry). I have use this one from Waitrose.

OR 400 grms of homemade puff pastry.

1 medium size egg bitten

Some baking parchment paper or silicon baking mat prepared on 2 baking trays

Method

Prepare the sausages to roll with the pastry. In order for the pastry to stick the sausage remove the sausage skin. This done by making a slit on the sausage and tear away the skin. Do this while keeping the sausage meat intact. It make life easier in dividing them into party/ bite size portions.

Roll out the pastry till it’s enough to cover the sausages. About 0.3cm thickness but not too thin. Then lay two sausage and just roll them onto the puff pastry till it’s covered. Slice them into quarters then one eighth portions.

Arrange them on the prepared baking tray. Try to give as much space as puff pastry will expand when baking in oven.

if you like you can also cut the pastry into strips and roll it around the sausage. It will look like the picture below.

Brush with beaten egg. And bake in oven for 20-35 minutes at 180 degrees. The baking time will vary with the size of the sausage. Once the puff pastry is rises and the skin is golden brown the sausage rolls are ready.
