This is a blog post on cooking sweet and sour pork at home. Sweet and sour pork is a classic Chinese dish found in restaurants and takeaways here. It has Cantonese origins using pineapple to give it a sour taste. I use canned pineapple to make this dish but it is possible to use fresh pineapples. Using fresh pineapple will give it more tartness compared to canned pineapples.

This dish is great when serving on a bed of boiled rice. Here is how to cook boiled rice in a rice cooker. It goes well with other dishes as well as on its own. There is also tomato ketchup and vinegar used in this recipe which gives the dish a more in-depth taste. Most recipes called for the diced pork to be deep-fried but it is optional. As deep-frying tends to use more oil. Of course, it also means nice crispy pork once it’s twice-fried but it optional. In this I simply pan fry the pork over a wok or frying pan.

Sweet and sour pork recipe

Ingredients

500 grams (1 lb) diced pork or lean pork belly skinned and trimmed of excess fat

Marinate for pork

1 tbsp light soy sauce

1/2 egg lightly beaten

3 tbsp cornflour

oil for pan frying or deep frying

1 clove garlic, peeled and minced

One onion skinned and roughly chopped

1 green and yellow pepper halved, seeded and diced

100 grams (4 oz) canned pineapple chunks, drained, juice reserved

Sweet and sour pork

For sauce

100 ml potato/ corn flour

60 ml (4 tbsp) water

60 ml pineapple juice

45 MLS rice or white wine vinegar

60 ml sugar

10 ml (2 tsp) light soy sauce

30 ml (2 tbsp) tomato ketchup

10 ml (1 1/2 tsp) Worcestershire sauce

Method of cooking

Prepare the ingredients as listed above. Marinate the diced pork for about 30 minutes. Then pan fry or deep fry it. Set aside. Mix the sauce ingredients together. set aside.

Then start stir-frying the vegetables. Heat up 1 tbsp of oil. When the wok is hot and smoky add the garlic and onion. This will take not long about 2-3 minutes. Adjust the wok heat accordingly. Not too hot till everything burns. Fry till becomes fragrant then add the peppers and pineapple chunks. Add the pork mix well. Then finally add the sauce. Cook till the sauce becomes thicker.
