Water spinach stir fry

Here is a recipes on cooking water spinach stir fry. I love cooking this recipe as it makes a great side dish to accompany a meat dish. As it is a South asian dish it serve with boiled rice. water spinach is very common vegetable in south east asia. It is cheap to buy as it is cheap to grow. In some countries this vegetable is ban as it grows like weed. It is very hard to grow in cold climate as it is not frost tolerate. However it is available in most asian grocers. Water spinach contains similar amounts of vitamin A as much as other greens as spinach, cress or kale. in addition they do also contain other good nutrients like vitamin c.

The stem are hollow and they are harvested when they are young.

Recipe

for 3-4 person as a side dish. Cook and prep time 20 mins

Ingredients

200 grms water spinach

1 medium size carrot

1 small size onion

3 cloves garlic

1 teaspoon of fish sauce

A few turns of black pepper on the grinder or black pepper powder to taste

1 tablespoon of cooking oil

Method

Wash and chop the water spinach stems across into 3-4 cm long.

Slice the carrots into thin slices. Peel and chop the onions into small pieces (about 0.5 cm in size) Do the same with garlic but finely chop it down.

In a pan heat up the pan in medium to high heat, add the cook oil. Saute the onion til it starts to soften. Then add the garlic saute till it’s fragrant. Add the carrot. Fry for one minute then add the water spinach. Saute it till it starts to wilt. Then add the fish sauce, black pepper and take it off the heat.

Serve with rice and a meat dish while it’s still hot. Enjoy.
