Tomato and tofu fried rice how to cook it at home

This is a blog post on how to cook tomato and tofu fried rice. It is a vegan/ plant-based main dish. Easy to make all in one cooking under 30 minutes. While it’s better to use chilled rice it is possible to use freshly cooking rice. For a recipe on how to cook rice on a rice cooker here is a link on my previous blog post. Cooking rice using a rice cooker is the most easiest way in my honest opinion on how to achieve fluffy rice. Failing that if time is short there is nothing wrong with just using shop/ supermarket-bought ready cooked rice. This recipe is also gluten-free.

Different variations of tomato and tofu fried rice

There are many variations to this recipe as one can all birds eye chilies and some South Asian flavors. For example like finely chopped lemongrass and kaffir lime leaves and it becomes A Thai version of fried rice.

This is store cupboard, fridge clear-out and freezer recipe as well. It is possible to vary the ingredients like using frozen peas and sweet corn instead. However, the tomatoes are a must as it adds to another level of taste to the fried rice. Another substitute to tomato is chili bean paste which a great store cupboard ingredient to have around.

Tomato and tofu fried rice

Ingredients

  • 1 medium-size onion chopped finely
  • 3 cloves garlic chopped finely
  • 300 grams cooked rice chilled
  • 200 grams cherry tomatoes halved
  • 3 stalks of spring onion finely sliced
  • 200 grams firm tofu cut into rectangle squares of 2cm X 1cm
  • 1 tbsp cooking oil
  • One tbsp sesame oil
  • 1 tsp low salt soya sauce

Cooking tomato and tofu fried rice

  • In a frying pan, wok or pot heat up the cooking oil. then add the chopped onion and the white parts of the sliced spring onion. Fry for about 3 minutes on medium heat till it softens. Then add the chopped garlic and fry till fragrant. after that, add the halved tomatoes and tofu fry for about1 minute then add the cooked and chilled rice. finally season with sesame oil and soya sauce.
