How to make this light butter cookie

  • 125 grams butter softened
  • 60 grams icing sugar
  • 1 medium egg yolk
  • 90 grams potato flour
  • 140 grams plain flour
  • 1 tbsp cold milk
  • black and red colouring
  • some black sesame seeds


Mix the dough

  • Add the butter and sugar using the flake shortcrust pastry method. Add the both flours slowly. then add the egg yolk and then the cold milk. knead till it is well mixed.
    Then seperate them to make the body of the mouse using the black colouring. For the ears add the red colour.
    Try to maintain the chillness all the time. This can be done by putting them in the fridge to chill.

  • This is where it takes the most time. Shapping them into desired shapes. just take your time and use pastry and icing tools that can be bpought online or kitchen shops. Add black sesame seeds to shape the eyes. I didn’t use them but got only white ones if there some do use them.

  • once done bake them in a preheated oven for 10-15 minutes at 180 degress Celsius. Don't bake too long otherwise the cookies will cracked. Do expect some changes in shape after baking.
