Tiramisu making it at home

This is a blog post on how to make tiramisu at home. Tiramisu is a bit like the British trifle except that is more chocolate and cream base rather than custard and fruit. It is a classic Italian dessert dish that is now available to buy ready-made from supermarkets here. I much prefer the homemade version as one can guarantee its taste and freshness.

Tiramisu ingredients

I use Pavesini biscuits instead of the usual Savoiardi sponge biscuits. As it is much smaller and lighter. They are available to buy online or in Italian grocers. Otherwise, most of the ingredients are available to buy from supermarkets. This recipe does contain raw eggs therefore it is not suitable for pregnant women. Do omit the liqueurs in this recipe if serving to young children.

It is handy to have an electric whisk to make tiramisu and a fridge to set it.

Tiramisu

Tiramisu recipe

NGREDIENTS  

  • 4 egg yolks
  • 150 grams caster sugar
  • 250 grams mascarpone cheese
  • 300 mls double cream
  • 2 tbsp dry Marsala
  • Two tbsp Tia Maria
  • 2 tsp vanilla extract
  • 300-400 mls strong black coffee (room temperature)
  • 60 or 30 60 Pavesini or 30 Savoiardi biscuits
  • 3 tbsp cocoa powder (not sweetened)
  • 50 grams of chocolate shaving from a bar of cooking chocolate

INSTRUCTIONS 

Make the tiramisu cream

  • In a mixing bowl whisk the egg yolks and sugar together till becomes light and creamy. In a separate bowl whisk the mascarpone and cream together until thick and creamy then add the Marsala and Tia Maria, vanilla extract, and sugar mixture. Whisk till smooth and well combined.

Putting the tiramisu together

  • Soak the biscuits in the strong coffee. Put a layer of cream (I just normally take away leaving a layer of cream at the bottom and put the rest of the mixture into the sugar mixture bowl). Lay the soaked biscuits on top of the cream then add more cream mixture. Do this till there are 3 layers and finally is a layer of cream on top. Sprinkle the chocolate powder and put the chocolate shaving on top.Leave to set in the fridge for 1-2 hours. Spoon/ cut into portions served chill.
