It’s strawberry harvest season at the moment. Summer is here a good reason to make something nice and cold. A strawberry ice cream made from fresh strawberries.
This strawberry ice cream uses fresh double cream and fresh strawberries. A bit of sugar and lemon or lime juice to give it more flavour.
This ice cream can be kept in freezer up to 3 days once churn. It can be serve or pair together with other things like waffles, banana split.

Ice cream maker
I use one of those freezer bowls ice cream maker. Although it’s a good idea it needs some freezer space to freeze it. It also needs at least 20- 24 hours to get a freezer effect. When using the freezer bowls always use with the paddle running add the ice cream mixture as you go along. Otherwise the mixture will freeze up before it starts to churn. It will spoil the motor of the unit. Here is a link to a freezer bowl ice cream maker.
If not there is a compressor ice cream maker. It normally cost more than the freezer bowl ones. Here is a link to reasonably priced compressor ice cream maker.
Failing that I remember in my childhood days my mum use to go back and forth to the freezer and electric whisk. This is so as to churn the cream mixture into ice. It’s a lot of hassle making ice cream that way but it works.
This recipe does work with other fruits but the recipe will need some tweaking with its ingredients.
Recipe strawberry ice cream
300 – 350 grams fresh strawberries
80 grams caster sugar
90 – 100 ml double cream
1 teaspoon lemon or lime juice
Ice cream maker
Blender to blend the strawberries
Wash and peel off any remaining green leaves off the strawberries.
Purée the strawberries until smooth, add all of the remaining ingredients. Pour the mixture into the freezer bowl with the paddle running. Allow the mixture to churn until desired consistency is achieved.

- 80 grams caster sugar
- 1 tsp lemon or lime juice
- 100 mls double cream
- Wash and peel off any remaining green leaves off the strawberries.Purée the strawberries until smooth, add all of the remaining ingredients. Pour the mixture into the freezer bowl with the paddle running. Allow the mixture to churn until desired consistency is achieved.
